Carol's Famous Recipe's

Graham Brittle Cookies

Lightly grease jellyroll pan then line with graham crackers.
Sprinkle 1 cup of chopped pecans over the graham crackers.

Melt 1 stick of butter and 1 stick of margarine together. Add 1/2 cup sugar and stir. Bring to a boil. Boil 3 min. stirring constantly.

Remove from heat. Drizzle over graham crackers.

Bake at 350* for 12 min. immediately put out on waxed paper to cool. When cool break into pieces and store in an airtight container.

 

Carol's Famous No Bake Orange Cookies

1 box vanilla wafers crushed
1 1/3 cups sugar
3/4 cup margarine
1/2 cup orange juice concentrate
3/4 cup shredded coconut
3/4 cup chopped nuts

Cream margarine and sugar. Add all ingredients and mix well. Roll dough into small balls then roll in powdered sugar. Refrigerate overnight and again roll in powdered sugar.

 

Gingersnap Cookies
1 cup brown sugar
3/4 cup butter (or Crisco)
1 egg
1/4 cup molasses
2 1/4 cup flour2tsp baking soda
1 tsp cinnamon
1 tsp ginger
1/2 tsp salt
1/2 tsp ground clove

Cream butter and sugar together. Add egg and molasses and mix.
Add the remaining ingredients and mix. Chill until dough can be formed into balls. Make 1 teaspoon size balls and roll in granulated sugar. Bake at 375* for 9-12 minutes.
